A WEYMOUTH chef is hoping to catch new trade with an innovative idea utilising the town’s location.

Tahir Jibet, of The Dining Room, has teamed up with local fisherman Clem Carter to launch ‘You Fish, We Cook.’ The idea is that visitors will take to the seas on Wild Frontier 2 with Clem and whatever they catch, Tahir will cook for them.

“It’s something I have wanted to do ever since I came to Weymouth,” he said. “But you know how it is, sometimes when you have an idea even though it’s great it’s hard to find the time to get around to it.

“But we are making it happen.

“The sea is right there, full of delicious fish. We’re going to keep it very simple, because we want the fish to really do the talking. It will be hours old; you can’t get much fresher than that.

“I don’t want lots of marinades and strong sauces to take away from the freshness of the fish.

“Fish shouldn’t be cooked until it’s completely flaky and dry. There’s definitely an art to cooking fish.”

Tahir is hoping the idea will catch on and become a well-known part of Weymouth’s tourist attractions.

He said: “We’re a business and of course we want to benefit from this, but it would be nice if this is good for the local economy.

“I am looking for it to be an activity in Weymouth, something we become known for. You’re going to Weymouth on holiday, what activities can you do there? Let’s make this one of them.”

Tahir is leading the ‘Whelk Revival’ at the Seafood Festival.
