CELEBRATE the arrival of the new Royal baby with a canapé that is equally as regal as the monarchy with one of Britain’s most loved seasonal potatoes.
Only available from April until July, Jersey Royal new potatoes are the only root vegetable to have the PDO status, (meaning they can only be grown in Jersey). They are often referred to as the ‘Champagne of the potato world’ making them the perfect food to celebrate the new addition to the Royal family.

Cooking time 20 minutes

Ingredients:
1kg Jersey Royals, scrubbed
Handful of baby spinach leaves
200g smoked salmon, cut into strips
300g crème fraiche
1 tbsp horseradish sauce
2 tbsp chopped fresh parsley
Salt and freshly ground black pepper
Cook the Jersey Royals in lightly salted boiling water until tender – about 15-20 minutes. Drain well and cool for 10-15 minutes.
Wrap 1-2 spinach leaves around each potato, followed by a strip of smoked salmon. Arrange on a serving plate.
Mix together the crème fraiche, horseradish sauce and parsley. Spoon small dollops on top of the potatoes and serve, seasoned with black pepper and garnished with parsley sprigs.
Cook’s tip: Use rocket leaves instead of spinach if you like.
