Preheat oven 180c

Line a loaf tin

  • 1/3 cup of vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups self raising flour (or gluten free self raising flour)
  • 1 cooking apple peeled and sliced
  • 3/4 cup toffee yoghurt (or plain yoghurt will work)
  • 1/4 cup milk

Drizzle

  • 1 teaspoon ground cinnamon
  • 1 tablespoon pure maple syrup

Mix the wet ingredients together and then add the dry ingredients and mix well.

Line the bottom of the loaf tin with the apple slices and then drizzle half of the cinnamon/maple on the apples.
