EXECUTIVE chef Steve Titman hosted a steak-tasting event for local chefs and catering butchers at the Summer Lodge Country House Hotel at Evershot.
The group was invited to Summer Lodge by EBLEX, which is an organisation for beef and lamb levy-payers in England.
It wanted their feedback on a new range of quality standard mark steaks, which could soon be making their way on to pub and restaurant menus throughout the country.
Steve selected six steaks from the proposed new range to cook and serve to his peers.
He said: “I was impressed by a number of the steaks EBLEX asked me to try out.
“My brigade and I took several weeks to come up with the recipes served today, experimenting with different cooking methods to see what worked best for each one.”
Ben Streak, head chef from The New Inn in Cerne Abbas, said: “The event was really thought-provoking and I’m interested in a number of the steaks presented, as I think they’d work well on our menu and for our customers.”
Hugh Judd, foodservice project manager for EBLEX from Weymouth, said: “Steve is a fantastic chef so I knew I could rely on him to help us with our research.
“We’d already tested the steaks with consumers but we wanted feedback from chefs and catering butchers before deciding on the final range.”
