A TASTE of Dorset has been unveiled by a Michelin starred chef in Dorchester.
Russell Brown, from Sienna Restaurant, was tasked with coming up with a unique creation for the Dorset County Show from four flavours voted for in a public poll.
He was given the ingredients of fennel, chives, thyme and sweet violets and came up with a concentrated paste that he claims can be used as a marinade for fish or as an ingredient for a salad dressing.
The Flavour of Dorset was commissioned by the Dorset County Show in partnership with Dorset Food and Drink and will now be incorporated into a salad dressing created by local firm Olives et Al.
That dressing will be available for visitors to the show on Saturday, September 7 and Sunday, September 8 to sample.
Chef Mr Brown said he had enjoyed the challenge of coming up with a flavour that summed up the county and was looking forward to seeing the public reaction at the show.
He said: “It's been good, they were slightly surprising flavours.
“The wild card was the sweet violet and the fennel was the most popular.”
