FANS of a famed West Country tipple will be be-cide themselves with news that they can now seek knowledge from a Cidermaster,

The Stable chain of pizza and cider restaurants has developed a new sommelier-style role for its bar staff who want to develop their knowledge of cider and share their passion with customers.

Cidermaster is a new position being offered by the Dorset-based chain, which has branches in Bridport and Weymouth.

Existing members of staff (known as Stablehands), can take their training to the next level, becoming experts in the cidermaking process and advising customers on which ciders to try and when.

Stable operations director David Gough said: "There’s now at least one cidermaster resident at each of our 17 restaurants.

"They’ve all been carefully chosen for their passion and enthusiasm. We think they’re unique in the world of cider and hospitality."

Stable head of cider Tim Gibb said the training Stablehands receive includes visiting cider orchards and even making their own brews.

He added: ‘They are crucial to the growth of the Stable, keeping our staff well informed and our customers happy. The new role also gives our staff some much deserved prestige – many of our cidermasters are now being asked to judge at county shows and other events.’

David Gough said that due to popular demand, cidermasters are now also hosting cider tasting experiences in each restaurant. He said these structured tasting sessions have been developed for customers who want to understand more about this increasingly popular drink.

Three levels of cider tasting experiences are available:

Level 1: Strictly Cider is an introductory cider-tasting experience that teaches drinkers about the cider-making process, different cider-making regions, fruit varieties and common things to look out for such as tannins, acidity and blending.

Level 2: Cider and Supper incorporates the Stable’s handmade pizzas with a Strictly Cider tasting experience

Level 3: Ultimate Cider Experience takes it to the next level with keeved (Champagne-style) ciders, apple aperitifs, single varieties and cider brandies, as well as pizzas and desserts.

Each cider tasting experience gives drinkers the chance to rate their drinks and make notes. Spittoons and notepads are provided. And if it’s a work party or special interest group, the session can be tailored to your group’s needs.
