IT WAS a recipe for success when top chefs and staff passed on their expertise to Weymouth College students.

Staff shut up the Blue Fish Cafe and Restaurant in Chiswell on Portland to spend the day and evening helping the hospitality and catering students.

They took over the college's Cygnets training restaurant when the hospitality and catering department held one of its six themed evenings for 80 people.

Chef Luciano Da Silva and his wife Jo brought the team from the Blue Fish for the session. They included Harry Da Hann, Duncan Watts, Darren Deadman and Karen Anderson.

Luciano cooked all day with the full time Level 2 and Level 3 City and Guilds catering students in preparation for a four-course dinner for the 80 diners.

Stephen Parker, who is programme manager for catering and hospitality at the college, said: "The evening was a great success and the diners absolutely loved the delicious four course meal as well as the ambience of the evening.

"We were very lucky to get such an accomplished chef as Luciano to work with our students. He is a real inspiration to work with and the students enjoyed the experience as much as the guests."

The menu included delicacies such as pork confit, sea bass and chocolate pudding, items taken from the Blue Fish menu.

Luciano's wife Jo who normally presides over the front of house at the Blue Fish was assisted by Karen to supervise the students who served the dinner in the style of the Portland restaurant.

Lecturer Donna Horlock said: "Luciano Da Silva works tirelessly at his Blue Fish Cafe and Restaurant on Portland to provide quality food and service for his discerning clientele.

"It was certainly a thrill for staff and students alike when Luciano, supported by his wife, Jo and his team, displayed their expertise and knowledge at Weymouth College.

"By the end of the evening our customers were marvelling at the quality of food and service provided and our staff and students were looking forward to putting the new ideas learnt into practice in Cygnets Restaurant."

Cygnets, the college's own restaurant, runs a lunchtime service with monthly themed dinner events.

The college's catering hospitality courses give students the opportunity to cook and serve food to customers and work on outside catering events and themed functions. Anyone interested in catering courses at the college can call 01305 761100.
