A RENOWNED Dorset nutritionist recently held a launch for her new book.

Barbara Cox, who lives in the county, is renowned around the UK and Europe as a nutritionist and launched Rainbow Recipes at an exclusive evening at the BWT Physio Therapy Centre in Poole.

The aim behind Barbara’s new book is to encourage people to improve their health by eating meals high in “disease-fighting, immune-boosting, pigment-rich ingredients.”

Known as the “Rainbow Chef”, Barbara has been appointed team nutritionist and nutritional adviser for a number of leading athletes including Emilio Sanchez, AFC Bournemouth and 40 UK Paralympic athletes, as well as contributing to a number of highly regarded nutrition books and health blogs.

In 2008, she was awarded the national title of ‘Entrepreneur of the Year’ by the British Chamber of Commerce and in 2015 was honoured with the Lifetime Achievement Award at the Dorset Venus Awards.

Guests got a chance to hear from Barbara and get a copy of her new book signed, as well as getting one on one advice on diet and lifestyle.

Rainbow Recipes promotes the health benefits of certain foods including those centred on a Mediterranean-style diet. It also highlights the importance of consuming fresh fruit and vegetable with a guide to selecting a range of colourful ingredients to ensure the best sources of nutrition. Barbara wrote over 70 recipes for the book detailing how to make meals and snacks that can help in the promotion of long-term health.

She said: “It is great at last to be launching my new recipe book. I am passionate about giving people the opportunity to correct and heal their bodies through nutrition.

“Filling the body with a rainbow of good foods can help people to improve their overall mental and physical wellbeing.

“It can also help the super-fit reach new levels of performance and give sick people a better chance of recovery.”
