It’s time to talk turkey . . .
Turkey curry
Turkey curry

IF you are still watching your weight and trying to slim down, this aromatic curry recipe is a light and delicious meal.

The ingredients make enough for two people.

Ingredients:
Half an onion
Half a large red chilli
1 clove garlic
20g (3/4oz) root ginger
200g (7oz) turkey breast steaks
2 large tomatoes
1 red pepper
5ml (1tsp) sunflower oil
150g (51/2oz) broccoli
30ml (2tbsp) natural yoghurt

Method

Finely slice the onion and chilli, removing the seeds. Crush the garlic and peel and grate the ginger.

Cube the turkey, tomatoes and pepper, removing the core and seeds.

Place the oil in a large non-stick saucepan. Add the onion, chilli, ginger and garlic. Cook over a gentle heat until softened. Add the turkey and cook for a few minutes, stirring.

Add 200ml (7fl oz) water, the tomatoes and pepper. Cover and simmer for 25 minutes. Add the broccoli florets and cook for 10 minutes. Stir in the yoghurt, heat through and serve.
