DORSET author Charlotte is set to turn dinner back to primeval times with her new book.

Charlotte Pike is based in Dorset and will be releasing her new book Smoked on May 4.

The book covers the art of smoking food – a tradition going back thousands of years.

The book revolves around the “ancient and delicious art” of smoking food. It is a way of cooking that has been used to flavouring and preserving a wide range of food in many cultures over the world for thousands of years and Charlotte said it’s “easier and quicker” than most people think.

In the guide, Charlotte takes food fans back to a “primeval way” of cooking with more than “80 smoky, succulent and mouth-watering recipes.” Dishes include smoked onion tart and mozzarella parmigiana to smoked butter fudge and even smoked sea salt chocolate truffles.

Charlotte said she wanted to make it as simple as possible and there are options available for all budgets when it comes to smoking kits.

There is even the option to make your own DIY cold smoker.

Other tasty recipes include: Asian smoked mackerel salad, smoked pork belly feijoada or mozzarella parmigiana and smoked sweetcorn fritters.

Charlotte, who lives in Wimborne, is already a best-selling author having written Fermented, about fermented food. This was short-listed for the André Simon Food Book Award, and the Hungry Student series.

She is a graduate of the Ballymaloe Cookery School and has contributed recipes to many cookery books and

publications. Charlotte also works as an independent cookery teacher. She studied French and

Spanish at Exeter University and then went to work in the City of London before turning her love of good food and cooking into her career. She is currently part of the Guild of Food Writers Committee.
