This is a very summery dish and can be used with any exotic fish like grouper, etc.

Serves 4 persons
4 x 1lb to 1 1/4lb snapper
2 mango peeled and chopped
2 avocado peeled and chopped
200 ml white wine
1 red chilli finely chopped
50 ml mango puree

Scale and gut the fish (your fishmonger can do this for you). Score into the flesh of the fish and season with sea salt and pepper, rub this into the flesh of the fish.

Place in a pan with a little olive oil and grill under a medium heat until cooked, you may also like to cook this fish on a BBQ!

In a pan add all the ingredients and bring to the simmer. Once warm, serve with the fish.
