Dorset-based nutritionist and author Barbara Cox has just completed her second cookbook, Eat To Be Fit, in e-book version, packed with hundreds of easy to cook, delicious recipes as well as secrets to weight loss.

“Cookbooks, I believe, should not only provide us with ideas and information, they should inspire us, lift our spirits, free our minds and brighten our outlook on life,” says Barbara.

“They influence our choice of meals, and, therefore, the long-term health of our family members. They suggest food to serve to friends at a dinner party, a topic of conversation around the table, and (especially in the case of this book) food for thought afterwards.”

Here is one of Barbara’s recipes to try:

The Ultimate Omelette:

“Omelettes are fabulous muscle food,” she says.

“The combinations are so varied that it makes cooking fun and it’s easy to create a delicious masterpiece in minutes.

“Eggs are the perfect post-workout food. Just one egg contains about 15 per cent of your recommended intake of protein along with several vitamins essential for health, including vitamin B2, B12, vitamin A and vitamin E.”

Ingredients for the basics:

2 eggs

Pinch of pepper

Pinch of Himalayan crystal salt

Pinch of turmeric

Coconut oil

1. For the perfect omelette, break 2 eggs, whisk and season with pepper, crystal salt and a pinch of turmeric. At this stage, you can add any of the add-ins (see list below).

2. Melt 1 tsp coconut oil in a fry pan and pour the mixture in the pan.

3. After 10 seconds, draw the edges of the mixture to the middle to ensure an even cooking time.

4. Cook for 1-2 minutes, until golden brown on the bottom.

Barbara adds: “The list of potential ingredient combinations for your omelette is endless. Try mushrooms, mixed peppers, finely chopped spring onion or red onion, watercress, avocado, smoked salmon, tuna or chopped herbs. Just add a small handful of your choice and add to the top of omelette while cooking."
