A 'unique' seafood restaurant will open its doors this week at Weymouth Harbour, creating 10 jobs.

Catch at the Old Fish Market, located above Weyfish on Custom House Quay, will welcome diners from Wednesday, June 23.

The seafood restaurant, which bosses say will serve 'high-quality' and 'affordable' food, has a primary focus on sustainability with all the food being sourced locally, and a wine list featuring a selection of wines produced in Dorset and the neighbouring counties.

The restaurant will be managed by Alexis Ross who is from Weymouth and attended Holy Trinity School before moving to London and working as a general manager in restaurants and hotels.

He hopes that this 'unique' restaurant, which has created 10 jobs, will offer something different to visitors and residents of Weymouth.

He said: "We have had loads of interest already and have got bookings going all the way through to next year.

"We want the restaurant to be elegant, not pretentious or stuffy. We don't want people to feel lucky to get a table here - we just want to serve high-quality, affordable food that is inclusive to people living in and visiting Weymouth.

"Diners will be immersed in the atmosphere of the fishmongers below and will get to hear all the hustle and bustle of everything that is going on. We are embracing the businesses around us, as well as the beautiful listed building that we are located within.

"I think that this is a unique restaurant and there is nothing else like this in the town."

Bosses are striving for the restaurant to be awarded a green Michelin star - a prestigious award highlighting restaurants at the forefront of the industry when it comes to their sustainable practices, who work with sustainable producers and suppliers to avoid waste, and reduce or remove plastic and other non-recyclable materials from their supply chain.

Alexis said: "We would love to be awarded a green Michelin star and we are working to achieve that. All our fish is sourced locally using day boats, there is no deep sea dredging, so it is all ethical. Any plastic that we use is either recycled or recyclable and our underfloor heating uses green energy. It is so important to u to source our food locally where we can and to support local fisherman, producers and diners."
