PART of the ‘derelict’ Brewers Quay development in Weymouth will be brought back to life in time for the Olympics.

New tenants are set to open up in the Excise House, with a bar and restaurant expected to welcome visitors in July.

The team behind The Stable pizza and cider house will open a ‘pop-up' bar and restaurant ahead of the Olympics.

Opening on July 1, Salt will feature similar communal tables as the Stable, with tables outside, and will be open from 9am till midnight every day.

Businesses at the former brewery site were asked to move out by the end of 2010 with view to a major redevelopment.

However, despite planning permission being received in January last year, work has yet to begin.

A spokesman for Salt said: “Seafood will be Salt’s staple, with locally-sourced crab, oysters and lobster – best enjoyed with a delicious bowl of Salt chips – a regular feature of the menu."
