Manzanilla Pasada Pastrana NV Hildalgo, currently £9.99 Majestic

Like Fino, Manzanilla is a fresh and dry Sherry produced around the port of Sanlúcar de Barrameda.

This offering is sourced from a single-vineyard and has been aged for at least a decade in oak casks, hence the term ‘pasada’.

The result is an intensely flavoured treat showing nutty flavours with that classic salty tang. A trademark aperitif that deserves your attention.

Amontillado is the middleman sherry that is darker than both Fino and Manzanilla but lighter than Oloroso.

This style is slowly oxidised which concentrates both the flavours and aromas.

Produced by Emilio Lustau, one of the leading names in sherry, this has been aged for a minimum of 12 years resulting in toasty and toffee aromas and an incredibly concentrated, yet dry palate of honey roasted nuts.

Lovely and complex and one to savour in the glass.
