Date and Walnut Cake
Ingredients:
Cake:
8oz chopped dates
1 tsp bicarbonate of soda
1 breakfast cup boiling water
10oz p/flour
3oz butter
8oz sugar
1 tsp baking powder
½ tsp salt
1 beaten egg
1 tsp vanilla
2oz chopped walnut
Topping:
5 tbs brown (soft) sugar
2 tbs butter
2 tbs cream
(chopped walnuts optional)
Method:
Pour the boiling water over the dates and add bicarbonate of soda. Let stand while following is mixed.
Sieve flour, salt and baking power together. Rub in fat and add sugar, walnuts, egg and vanilla.
Add to date mixture.
Turn into greased and lined sq 9" x 9" tin.
Bake in moderate oven for approx 55 mins (170° fan oven).
For the topping:
Mix butter, sugar and cream together. Boil for three minutes, stirring well. Spread on cake. Sprinkle with chopped walnuts.
